Many thanks for your sweet comments, once again.

The crust: here is what I did: 1/2 cup sweet rice flour; 1/3 cup quinoa flour; 1/3 cup quinoa flakes; 1/4 cup brown rice flour; 7 cold Tbsp butter; 1/2 tsp salt;  1.5 tsp xantham gum (optional); 4 to 5 Tbsp cold water. Combine all ingredients, starting with dry ingredients with butter, then adding the water as needed. Wrap and chill. Let come back to room temperature before rolling.</description>
