The most wonderful colour.Absolutely divine! I love the cooked texture as well.This year I have started by making a quince tarte tatin;..Give it a go. 		<description>I do exactly the same thing in books shops - tell G I am off to look in the Cooking section and then he has to come and get me an hour later!
I love quinces too - my favourite method is to poach them in a sweet wine, and eat the fruits with cold cream and then use the syrup in place of sugar in other deserts.  
Mmmmmmm, something else to look forward to next Autumn!
