Bea, I only had quince last year for the first time. The first recipe asked for the quince to be poched in teh oven for a very long time. What my surprise when I took it out. The most wonderful colour.Absolutely divine! I love the cooked texture as well.This year I have started by making a quince tarte tatin;..Give it a go. I suspect that you will not be disappointed.

I have seen that cookbook and was wondering if I should consider buying. I liked what you had to say about it. Quinces are a fruit I have never baked with and I am resolved to do it this year. I hope I get around to it!

Lovely tarts Bea. Quinces are also great substituted for apples in a Tarte Tatin.

I love quinces and honeycrisp next to pink ladies are my favorite apple so I could really go for this!
