AH this is a good question for you are right, it is too common to be able to buy cooked beets in France. I am not sure to be honest what you could do. No way you cannot find fresh beets at fresh veggie markets?

Borscht? great :) well, even if avocado and tomatoes are not a part of Lithuanian borscht, everybody can make his/her own variation of this soup. And I think I'll try to make your one. (My recipe: beetrots, clabber, cucumber, hard boiled eggs, some dills, scallions - simple, but I like)

Rlly, Sherry vinegar is vinaigre de xeres. You should not have a hard time to find it. Balsamic can do although it is a little sweeter than sherry vinegar to me.
